Preparation
Roast the spices. The cumin, oregano, cinnamon, cloves, pepper and garlic. Use a comal.
After they are well roasted, grind all the spices, preferably in mortar.
Dissolve the achiote with the orange juice and add the 3 tablespoons of oil.
Stir the spices with the achiote and heat until it boils.
Use this marinade for any meat, preferably pork and let it marinate overnight.
