Ingredients

1 serving
  • 10 pieces of pasilla chili pepper clean and deveined
  • 1/4 of piece of White onion
  • 1 clove of garlic peeled and without germ
  • 5 pieces of green tomato match in rooms
  • 100 milliliters of beer clear or dark
  • 20 milliliters of vegetable oil
  • 3 pieces of peppercorn
  • 2 pinches of coarse salt
  • 80 grams of Cotija cheese

    Preparation

    Fry the chiles in oil and remove them. Roast the garlic, onion and green tomatoes. Grind all of the above with beer, 1 pinch of salt and pepper. Fry this grind and season with another pinch of salt. Accompany with crumbled or shredded cotija cheese.
