Ingredients

1 portion
  • 10 pasilla chili peppers, clean and deveined
  • 1/4 white onions
  • 1 clove garlic, peeled and without germ
  • 5 green tomatoes, match in rooms
  • 100 milliliters beer, clear or dark
  • 20 milliliters vegetal oil
  • 3 peppercorn
  • 2 pinches coarse salt
  • 80 grams Cotija cheese

Preparation

Fry the chiles in oil and remove them. Roast the garlic, onion and green tomatoes. Grind all of the above with beer, 1 pinch of salt and pepper. Fry this grind and season with another pinch of salt. Accompany with crumbled or shredded cotija cheese.

PRESENTATION

Serve in a deep dish of clay, it will give a great presentation to your sauce.

TIPS

Fry the chiles one by one to prevent them from burning. Clean the chiles with a damp cloth.
