This Delicious 3 Chile Noodle Soup is a typical Mexican recipe very easy to cook. Noodle pasta is very common in Mexico and is prepared in many different ways. It works as a hot starter or garnish for some stew. Traditionally it is cooked with chipotle chile in adobo or dry and it is served with fresh cheese, sour cream and in some occasions pork rinds and avocado.

Ingredients

4 portions
  • 1/4 onions

  • 3 tomatoes
  • 1 pasilla chili pepper, deveined
  • 2 guajillo chilies, deveined
  • 3 morita chili peppers, deveined

Preparation

In a skillet over medium heat, roast the onion with the garlic, the tomatoes and the chilies. Remove and soak the peppers in hot water for 10 minutes or until softened. Peel the garlic and set aside.

Pour the tomato sauce and bring to a boil. Cover and lower the heat, cook until the noodle is cooked and the liquid has completely reduced.
For presentation, compact the noodle into a single ring or mold. Desmolda and decorate with cream, nopales, avocado, fresh cheese, cilantro and chopped radish. Enjoy
