Beans have always been a good source of energy and borrachitos will not be the exception.

Ingredients

10 portions
  • 1/2 kilos Peruvian beans
  • 1 onion, medium cubed
  • 2 tomatoes, in cubes
  • 1 bunch fresh coriander, chopped
  • 1 package bacon, in squares
  • 1 bag pork rind, to stew (not the flour snack)
  • 1 cup mashed tomatoes
  • 1 beer
  • 1 jalapeno pepper, optional

Preparation

Boil the beans with 2 1/2 liter of water, wait until they are tender and salt (not garlic, not onion).
When the beans are tender, add the pork rind and leave on a very low heat.
Fry the bacon in small squares with the onion and the jalapeño (if you do not want too much spicy to make a cut to the chili, this way it will only leave the flavor and you will not have to eat it).
Add the tomato in cubes and fry, pass this sauce to the pot of beans with pork rind along with the purée and cilantro.
Finally add the beer little by little, depending on how strong you want the beer flavor. Cover and boil for 3 min.
