Portobello mushrooms stuffed with sautéed beans, cilantro with a spicy twist of pasilla chilli covered with a guacamole with a light touch of citrus and fresh mint. Very rich to accompany them in taquitos or as you like.

Ingredients

6 portions
  • 1 cup pinto beans, cooked, for the mashed bean
  • 1 pasilla chili pepper, soaked in water, for the bean puree
  • 1/2 bunches fresh coriander, for the bean puree
  • 1/4 white onions, finely chopped, for the mashed bean
  • 1 pinch salt, for the bean puree
  • 2 avocados, only the pulp
  • 1/4 white onions, for the avocado puree
  • 1/2 bunches fresh coriander, for the avocado puree
  • 1/4 cups peppermint, for the avocado puree
  • 1 tablespoon sea salt, for the avocado puree
  • 12 portobello mushrooms
  • 1 tablespoon olive oil
  • 1/4 cups Mint leaf

Preparation

Add the beans, pasilla, coriander and white onion to the blender, blend perfectly, season to your liking.
Heat a pot over medium heat and cook the beans for 10 minutes, reserve.
Add the avocado, the white onion, the cilantro, the mint leaves, the grain salt and the liquor for two minutes so that the ingredients are integrated and a guacamole is formed. Reservation
Heat the grill over high heat, when it is very hot grill the portobellos until you form the classic marks. Remove the mushrooms, serve on a plate filled with beans and top with avocado puree. Garnish with olive oil droplets and mint leaves. Enjoy

PRESENTATION

Serve the portobellos filled with beans with a layer of guacamole a few drops of olive oil and fresh mint to finish.
