This rich dish of cauliflower goes au gratin with cheese and in a delicious béchamel sauce. It is a great accompaniment for a meat.

Preparation
Preheat the oven to 375 F or 190 degrees.
Cook the cauliflower in pieces in a large pot filled with water with boiling salt for 5-6 minutes. The cauliflower should remain firm but cooked.
In a saucepan, melt 2 tablespoons butter. Once melted, add the flour and stir without stopping with a balloon whisk for 2 minutes. Little by little, add the milk until the sauce thickens. Season with 1 teaspoon of salt, pepper, nutmeg 1/2 cup of gruyere cheese and Parmesan cheese.
Put a little sauce in a pyrex and put the cauliflower on top (without the water). Put the rest of the sauce on top.
Mix bread crumbs with the rest of the gruyere cheese (1/4 cup) and sprinkle on top. Melt the remaining 2 spoons of butter in the microwave and put on top. Put salt and pepper.
Bake for 25-30 minutes until golden brown on top.
It is served hot.
