Ingredients

4 portions
  • 1 cauliflower, cut into small pieces
  • enough Water
  • enough salt
  • 2 tablespoons butter
  • enough black pepper, freshly ground
  • 1/4 tablespoons olive oil
  • 1 tablespoon yellow lemon zest
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon dill, finely chopped
  • 1 branch parsley, fresh, to decorate

Preparation

In a pot with boiling water and salt, cook the cauliflower for 35 minutes or until very soft. Drain and cool slightly.
Process the cauliflower in a food processor with the butter until you obtain a smooth puree. Season with salt and pepper. Reserve hot.
In a saucepan over low heat, heat the olive oil. Once it is very hot, remove and add the lemon zest, let it infuse a few minutes. Chill
Mix the infused oil with the parsley and the dill.
Serve the cauliflower puree and pour a little of the oil on top, decorate with a sprig of parsley. Serve.

PRESENTATION

Serve the puree with the herbal oil and finely chopped parsley.

TIPS

You could make the puree with roasted cauliflower so that it has more flavor.
