Ingredients

4 servings
  • 4 pieces of poblano pepper
  • 1/2 Cup of Manchego cheese
  • 1/2 Cup of cream
  • 1 piece of onion cut in half moons
  • 1 piece of corn cut
  • 1 tablespoon of oil
  • 1 tablespoon of Butter
  • 2 teaspoons of bouillon powder
  • 1 teaspoonful of Salt

    Preparation

    Roast the chiles over the flame of the stove until its skin has burned evenly. Place them inside a plastic bag and wrap the bag with a towel; let them rest until they have cooled. Then peel them, remove the veins and cut them in slices.
    While the chilies cool down, boil the corn kernels in a pot of boiling salted water until they have softened, about 10 minutes. Drain well.
    Heat the oil with the butter in a saucepan over medium heat,and sauté the onion until it looks clear, then add the Poblano chile slices and cooked corn kernels. Season with the bouillon powder and cook for 3 minutes. Reduce the heat and add the cream and cheese; turn off and serve as soon as the cheese has melted.

    PRESENTATION

    Place the chile rajas on a plate and accompany them with tortilla chips. it is a delicious dish.

    TIPS

    For quicker and easier preparation, you can find frozen chile poblano rajas already cut and cleaned, they also sell them in cans, and it reduces the preparation time to 15 minutes.
