Preparation
Fry the noodle in 3 tablespoons of oil. Leave browning over low heat, constantly moving to avoid burning. Place on a plate with absorbent paper to remove excess oil.
Cook the tomatoes in boiling water. Once cooked, cut them into cubes.
Chop the onion and garlic in squares. Sofríelos in a pan with olive oil. Add the tomato cubes and two Clemente Jacques ® Whole Chipotle Chilies as well as a spoonful of chipotle marinade.
Blend everything with ¾ cup of chicken broth or water.
Strain the mixture and sauté in a pan. Add the tomato puree, season with salt and pepper to taste.
Add the dry noodle to the tomato broth, do not move too much to avoid beating it, just try to cover it. Cook covered for 5 minutes or until the broth has been consumed and the noodle is cooked. If necessary add a little more water or broth.
