I recommend using frozen sweet corn, although if you want you can buy them fresh. In that case, remove the green leaves and clean the "beards" or brown hairs that the corn has.
Heat a grill or comal in case you do not have one, let them roast until they are fully cooked, they will burn a little but they will taste delicious. Do not worry, it's normal for them to look dark.
You can remove a grain from the center to know if they have enough cooking.
Once cooked, spread with mayonnaise to taste. Squeeze half a lemon for the whole piece.
Sprinkle Cotija cheese and chile piquín.
Add a bit of chopped cilantro at the end. Season with grain salt and pepper to taste.
