This delicious Chipotle Rice is an excellent recipe for serving as a starter or side dish. The best thing about this recipe is that you will not have to worry about where to buy red rice, since it is so easy that you will want to cook it whenever you can.

In Mexico rice is very common, Arroz al Chipotle is a variety of this delicious dish, as it has a spicy touch. You can use medium grain rice or short or long grain rice, the one you like the most. Accompany your dishes with this recipe, add avocado to give it a rich flavor.

Ingredients

8 servings
  • 3 pieces of tomato
  • 4 pieces of chipotle peppers in adobo sauce
  • 1/4 of Cup of onion
  • 1 piece of garlic
  • 1 Cup of chicken soup
  • enough of Salt
  • enough of black pepper
  • 2 cups of rice soaked and drained
  • enough of oil
  • 3 cups of chicken soup
  • 1/4 of Cup of corn kernels
  • 1/4 of Cup of pea
  • 1/4 of Cup of carrot in cubes
  • enough of epazote
  • 1 piece of chipotle chile pepper dry

    Preparation

    Blend the tomato with the chipotle, onion, garlic, a cup of chicken broth, enough salt and pepper until a homogeneous mixture is obtained. Reservation.
    In a saucepan over medium heat heat the oil and fry the rice, stirring from time to time carefully so as not to break it. When the rice has a golden color, remove the excess oil and pour the tomato mixture, let it absorb slightly and add the rest of the chicken stock, the vegetables, the epazote and the dried chipotle pepper.
    Once it is boiled, cover and lower the heat. Cook for 20 to 30 minutes or until the rice is cooked and the liquid is completely absorbed. Scrape 10 minutes before serving.

    PRESENTATION

    On an extended plate, ready to accompany your dishes.

    TIPS

    Wash the rice 3 times to remove excess starch. Soak rice for 15 minutes in hot water and drain before frying. Frying is essential to seal the rice, preventing it from releasing too much starch during cooking, which will cause it not to beat.
