An elegant way to serve mashed potatoes that is very easy. This recipe is ideal if you have mashed leftovers from a previous day.

Ingredients

6 portions
  • 750 grams potato
  • 3 tablespoons butter
  • 4 tablespoons milk
  • 2 eggs
  • 1 teaspoon nutmeg
  • to taste black pepper
  • milks, to brown the duchesses

Preparation

Peel the potatoes and cut into cubes of 2 square cm.
In a large pot with water, boil the potatoes with salt until well cooked and very soft.
Remove the potatoes from the water, allow them to cool 5-10 minutes and mash them.
Add butter and milk and season with salt, pepper and nutmeg. If you want more creamy, you can add more milk and butter.
Preheat the oven to 120 degrees Celsius and prepare a baking sheet with waxed paper.
With a pastry bag make duchesses with the mashed potatoes.
I baked the potatoes for 25 minutes. Remove from the oven and with a brush paint with the yolk with milk, return to the oven. I baked for 20 more minutes.

PRESENTATION

Serve the duchesses to accompany an elegant dish of meat, fish or chicken.

TIPS

If you want you can freeze the duchesses and use up to 2 weeks later.
