Preparation
Boil the water with a pinch of salt.
Place the potatoes and cook until they soften.
Place 1 tablespoon of vegetable oil in a pan, add the chopped onion and garlic.
Fry until they are transparent.
Drain the potatoes, add the onion and the garlic mixture.
Puree until smooth.
Add the remaining ingredients and mix well.
Form small empanadas with clean hands and shape them.
Add the remaining oil to the pan and simmer until crispy and golden on the outside.
Flip to brown on both sides.
