Preparation
Wash the aubergines, peel and cut into small strips, as small as possible
Place in a glass bowl, add lemon, oil and salt
Mix and adjust the amount of salt if necessary
Stir and leave to rest in the refrigerator for at least one hour
Remove from refrigerator before serving to serve at room temperature
Sprinkle sesame seeds when serving
