Ingredients

6 servings
  • 200 grams of eggplant 200 grams
  • 250 grams of zucchini
  • 200 grams of carrot
  • 3 Red bell peppers big
  • 70 grams of mushroom
  • 2 branches of fresh thyme chopped fine
  • 2 branches of parsley fresh chopped fine
  • 170 milliliters of olive oil
  • 1 tablespoon of lemon juice
  • 3 spoonfuls of basil
  • 2 1/2 spoonfuls of balsamic vinegar
  • Salt
  • black pepper

    Preparation

    Cut the aubergine, zucchini, carrot and mushrooms into slices of 1 cm. Cut half of the peppers and remove the seeds, cut them into pieces.
    Spread the vegetables in a tray, sprinkle with salt, pepper, thyme and parsley. Reserve 2 tablespoons of olive oil and mix the rest with lemon juice. Pour over the vegetables and sprinkle with basil. Leave to marinate for 2 hours.
    Heat a broiler or oven in "broil" and grease a tray with the remaining oil. Roast vegetables slowly on both sides until tender.
    Put the vegetables in a serving bowl and bathe with balsamic vinegar.
