Preparation
With a food processor, slice the onion into strips.
Remove the skin from the potatoes and using the food processor slice into strips just like the onion.
Mix the potatoes and onion and add the lemon, flour, 2 tablespoons of salt and 2 tablespoons of pepper. Add the egg and mix well.
In a large frying pan, heat the oil. Once it is very hot, the latkes are made into balls with the potato mixture and flattened during cooking with the shovel.
Remove from oil and dry thoroughly to remove excess grease.
Serve with apple sauce or puree. Or if you want to try new combinations with cream and salmon.
