Ingredients

6 portions
  • 3 sweet potato orange
  • 2 tablespoons olive oil
  • enough salt
  • 1 cup cream cheese
  • 1 tablespoon butter
  • 1/2 cups red onion, finely chopped
  • 2 cups mushroom, filleted
  • 2 cups spinach, chopped
  • 1 teaspoon thyme
  • 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1/2 cups sour cream, to decorate
  • 1/2 cups bacon, finely chopped and fried

Preparation

Preheat the oven to 200° C (400 °F)
Place the sweet potatoes on aluminum foil, add the olive oil and salt, wrap. Place them on a baking sheet and bake until they are soft when puncture it with a fork, about 40 minutes. Let cool.
Cut the sweet potatoes in half and with a spoon remove the filling, and mix in a bowl with cream cheese until completely integrated. Set aside.
In a pan melt the butter and cook the purple onion, add the mushrooms, spinach, thyme, garlic powder, salt and pepper. Cook for 5 minutes.
Fill the sweet potatoes with the cream cheese mixture, place a little of the mushroom sauté on top, decorate with cream and fried bacon.

PRESENTATION

Serve the sweet potato, place the filling on top and decorate with the sour cream and the pieces of fried bacon.

TIPS

If you do not want to bake the sweet potatoes, you can boil them in salted water until they soften.
