These rich Spanish peppers are stuffed with goat cheese and seasoned with parsley, thyme and sherry vinegar. They are delicious and very healthy.

Preparation
In a small bowl combine the echalots, chives and vinegar. Season with salt and pepper.
Cut the top of each pepper to fill them.
Fill the peppers with the goat cheese.
Heat a large skillet over medium heat with a spray to cook and cook the peppers for 30 seconds on each side.
Place the pepper on a platter and sprinkle the parsley and thyme. Then with a spoon place the dressing on them and serve.
