These rosettes are a different way to prepare mashed potatoes and give them a fun twist, they are ideal as a garnish for meat or vegetables. They have a rich flavor and a crunchy texture on the outside, but soft on the inside. Ingredients

4 portions
  • enough Water
  • enough salt
  • 3 potatoes, peeled and cut into medium cubes
  • 1 cup whipping cream
  • 1 cup butter, soft
  • to taste salt
  • to taste black pepper
  • 1 teaspoon nutmeg
  • 2 cloves garlic, roasted
  • 1 egg
  • 1 egg yolk
  • 1 cup parmesan cheese, grated
  • enough chives, to decorate

Preparation

Heat a pot of water until it boils, add salt and cook the potatoes for 20 minutes. Puree and reserve.
In a small pot, heat the cream, butter, add salt, pepper and nutmeg, keep on the fire for 5 minutes. Empty this mixture to the potatoes you reserved, add the garlic and in a processor, mash, add the Parmesan cheese, the egg and the yolks, mix well. Move to a pastry bag with a curly duya and refrigerate for 10 minutes.
Form the rosettes in a tray with wax paper and bake for 15 minutes (approximately) at 200 ° C. Remove and cool slightly.
Garnish with parsley and grated Parmesan cheese.
