Preparation
Heat a pot of water until it boils, add salt and cook the potatoes for 20 minutes. Puree and reserve.
In a small pot, heat the cream, butter, add salt, pepper and nutmeg, keep on the fire for 5 minutes. Empty this mixture to the potatoes you reserved, add the garlic and in a processor, mash, add the Parmesan cheese, the egg and the yolks, mix well. Move to a pastry bag with a curly duya and refrigerate for 10 minutes.
Form the rosettes in a tray with wax paper and bake for 15 minutes (approximately) at 200 ° C. Remove and cool slightly.
