A rich and simple potato salad that can be prepared a day in advance.

Ingredients

8 portions
  • 1 1/2 kilos red potato, little girl
  • 3 tablespoons rice vinegar
  • 3/4 cups mayonnaise
  • 3 green onion, medium thinly sliced
  • 1 celery, cut into 1/2 cm cubes
  • 1/4 cups parsley, chopped
  • 1/4 cups basil
  • 2 tablespoons dill weed, chopped
  • 1 1/2 teaspoons lemon zest

Preparation

Put the potatoes to boil in a large pot with water. Reduce the heat and cook until the potatoes are tender, about 17 minutes. Drain and let stand for 20 minutes.
Cut the potatoes into pieces.
Put a layer of potatoes in a bowl and sprinkle with a little vinegar, salt and pepper. Continue with layers of potatoes with vinegar, salt and pepper.
Add the rest of the ingredients and mix well.

TIPS

It can be prepared 8 hours in advance and store refrigerated.
