Potato Salad with Herbs

A rich and simple potato salad that can be prepared a day in advance.

Ingredients

  • 1 1/2 kilos of red potato little girl
  • 3 spoonfuls of rice vinegar
  • 3/4 of Cup of Mayonnaise
  • 3 green onions medium thinly sliced
  • 1 celery cut into 1/2 cm cubes
  • 1/4 of Cup of parsley chopped
  • 1/4 of Cup of basil
  • 2 spoonfuls of fresh dill chopped
  • 1 1/2 teaspoons of lemon zest

    Preparation

    Put the potatoes to boil in a large pot with water. Reduce the heat and cook until the potatoes are tender, about 17 minutes. Drain and let stand for 20 minutes.
    Cut the potatoes into pieces.
    Put a layer of potatoes in a bowl and sprinkle with a little vinegar, salt and pepper. Continue with layers of potatoes with vinegar, salt and pepper.
    Add the rest of the ingredients and mix well.

    TIPS

    It can be prepared 8 hours in advance and store refrigerated.
