Preparation
Boil water with salt in a large pot. Add potatoes and cook until medium soft.
Remove the potatoes from the water and allow them to cool for 20-25 minutes. With a sharp knife cut the potatoes into thick slices.
You have towers with a slice of thick potato, a sheet of goat cheese, a mint leaf, another potato, another sheet of goat cheese and finally another potato. Season with olive oil, salt and pepper.
Place the towers on the grill (preferably with charcoal) and cook for 15 minutes or until the cheese is half melted. Remove from heat and serve.
