Ingredients

6 servings
  • 1 kilo of cambray potato
  • enough of Water
  • enough of Salt
  • 1 Cup of coriander for pesto
  • 1 Cup of parsley for pesto
  • 1 Cup of Water
  • 1 Cup of ice
  • 2 cloves of garlic for pesto
  • 1/2 Cup of olive oil for pesto
  • 1/4 of Cup of pinion for pesto
  • 1/4 of Cup of almond for pesto
  • 1/4 of Cup of Parmesan cheese for pesto
  • 1 teaspoonful of sea salt for pesto

    Preparation

    Cook the potatoes in a pot with water and salt until soft and reserve.
    Boil water in a pot and dip the cilantro and parsley for a few seconds, remove from the boiling water and place them in a bowl with water and ice to stop cooking, drain and reserve.
    For the pesto, blend the previously blanched leaves, the garlic, the oil, the pine nuts, the almond, the Parmesan cheese and the coarse salt until you get a smooth pesto, reserve.
    Heat a pan over high heat and cook the potatoes with the pesto until they are completely mixed, served on a platter to share.

    PRESENTATION

    Serve the potatoes with the pesto in a platter to share.

    TIPS

    You can bake your potatoes at 200°C (392 °F) to give them a more golden touch.
