Preparation
Cook the potatoes in a pot with water and salt until soft and reserve.
Boil water in a pot and dip the cilantro and parsley for a few seconds, remove from the boiling water and place them in a bowl with water and ice to stop cooking, drain and reserve.
For the pesto, blend the previously blanched leaves, the garlic, the oil, the pine nuts, the almond, the Parmesan cheese and the coarse salt until you get a smooth pesto, reserve.
Heat a pan over high heat and cook the potatoes with the pesto until they are completely mixed, served on a platter to share.
