Preparation
On a board cut the potatoes into wedges and wrap them with the bacon.
Fry at low temperature (160 °C) (320°F)for a few minutes until you see the golden brown shell, remove from oil place on absorbent paper and wrap in bacon, securing with chopsticks if necessary.
Fry again at a higher temperature (180°C) ((357 °F)to finish cooking the potatoes and make the bacon crispy. Drain on absorbent paper and reserve.
Blend the bbq sauce, the roasted habanero peppers, the roasted onion, the roasted garlic, the lemon juice, and the vinegar until the mixture is smooth.
In a bowl add the potatoes with bacon and bbq sauce, mix with a spoon until completely incorporated.
Serve hot and garnish with green onions.
