Preparation
Pre warm the oven to 220 degrees Celsius.
Grease two baking trays with olive oil.
Peel the potatoes and cut them into sticks.
Cook the potatoes in boiling water until they are half cooked, 5 minutes.
Remove from the water and dry thoroughly with paper towels.
Place on the baking sheets the potatoes with a little more olive oil, salt and pepper and cook for 25 minutes in the oven, turning them every 10 minutes.
