Preparation
Boil the potatoes with peel until they are soft but still firm.
While the potatoes boil, cut each half of walnut in 4 equal parts, shred the celery, cut along and then diced.
Chop the whole apple and peel in small squares, add the lemon juice and cover with plastic so they do not get brown.
Remove the potatoes and pass through a sieve, wait for them to cool.
In a bowl mix the tablespoon of mayonnaise, sugar, 1/3 teaspoon of mustard and a pinch of salt. Stir well.
Add the celery, apples, walnuts and raisins to the mayonnaise cream, stir well.
Sprinkle the board lightly with pepper.
Remove the skin from the potatoes that are already cold, cut into squares about the size of a dice on the board with the pepper.
Add the chopped potatoes to the rest of the salad and wrap lightly so that the potatoes do not beat.
Refrigerate and serve.
