Potatoes Filled with Shrimp

Potatoes are always the perfect accompaniment to your dishes, and these delicious potatoes will not be the exception with their creamy shrimp and cream cheese filling and a spicy chipotle flavor, gratinated with manchego cheese. They are irresistible!

Ingredients

6 portions
  • 6 potatoes
  • 1 tablespoon butter
  • 3 tablespoons red onion
  • 1 tablespoon garlic, finely chopped
  • 2 cups shrimp, clean and without peel
  • 1/2 cups sour cream
  • 190 grams cream cheese
  • 2 tablespoons chipotle chili, ground
  • to taste salt and pepper
  • 1 tablespoon parsley, finely chopped
  • 1 cup manchego cheese, to gratinate

Preparation

Preheat the oven to 180 ° C.
Wrap the potatoes in aluminum foil and bake for 40 min.
With a spoon, carve the potatoes and set aside.
For the filling, heat the butter in a pan over low heat and sauté the onion, add the garlic, the shrimp cook for 2 min, add the sour cream, the cream cheese, the chipotle pepper, season with salt and pepper add the parsley and remove from fire.
Fill the potatoes with shrimp, add manchego cheese and gratin for 10 minutes in the oven.
Enjoy warm.

PRESENTATION

On an extended plate served with salad.

TIPS

If you do not have an oven, you can boil the potatoes and to grill them you can wrap them in aluminum foil and water bath them.
