  • 1 bag McCain Super Wedges®
  • 4 guajillo chilies, deveined and seedless
  • 4 chipotle chilies, deveined and seedless
  • 4 cascabel chili peppers, deveined and seedless
  • 1/4 teaspoons garlic powder
  • 1/2 teaspoons onion powder
  • 1 teaspoon lemon zest
  • enough oil
  • 1/4 cups mayonnaise
  • 1/4 cups jocoque
  • 1/4 cups lemon juice
  • 1 cup fresh coriander
  • 1 tablespoon salt
  • 1 tablespoon black pepper

Preparation

Heat a pot with the oil over high heat, wait for the oil to boil, and fry the McCain® Super Wedges directly frozen until crisp and golden, about 3 ½ to 4 minutes. Drain on absorbent paper and reserve.
Grill the peppers on a griddle over low heat until dry. Blend to a fine powder and mix with powdered garlic, onion powder and lemon zest. Sprinkle this mixture over the potatoes and mix very well.
For the dressing, blend mayonnaise with jocoque, lemon juice, cilantro, salt and pepper.
Serve the potatoes with the dressing and enjoy.

TIPS

Grill the chiles slowly to avoid burning and bitter preparation. If you prefer, you can dry them in the oven at 180 ° C (356F) for 5 min.
