Potatoes with Bacon and Beer Sauce

There will never be a better snack or side dish, than a recipe with potatoes, but as we know how versatile this ingredient can be, we prepared a very original option: Potatoes with Bacon and Beer Sauce. These potatoes are the best option for a barbecue evening or to accompany a juicy cut of meat. To cook this recipe with potatoes you have to fry them very well over low heat for a long time, this will make them have a good texture without burning.

Ingredients

10 servings
  • enough of vegetable oil to blanch the potatoes
  • 2 kilos of cambray potato cut in half
  • 3 branches of fresh rosemary
  • 1 head of garlic Cut in half
  • 2 cups of bacon finely chopped
  • 1 tablespoon of garlic finely chopped
  • 2 spoonfuls of shallot
  • 1/4 of Cup of honey
  • 2 cups of light beer
  • 3 spoonfuls of Butter
  • 1/4 of Cup of Dijon mustard
  • enough of fresh rosemary for the sauce
  • enough of salt and pepper

    Preparation

    Heat a pan over medium heat with the oil, when the oil is between 100°C and 120°C (212°F -248°F) submerge the potatoes and cook over low heat to blanch them, that is, brown and soften at the same time.
    Add the rosemary and the garlic head to flavor the oil. When the potatoes are cooked, remove and drain on absorbent paper.
    Heat a deep saucepan over medium heat, cook the bacon until it browns, add the garlic, shallot, honey, amber beer, butter, mustard, rosemary and cook until you get a sauce. Season with salt and pepper to taste.
    Serve the potatoes, pour the sauce on top and decorate with aromatic fresh herbs.

    PRESENTATION

    Serve on a platter decorated with more rosemary and bacon.

    TIPS

    You have to fry the potatoes on low heat for a long time in order to cook well and they don't burn.
