Preparation
Place a pot over medium-high heat and add butter and oil. Add the onions, salt, pepper, thyme and sugar.
Fry over medium heat stirring occasionally to integrate all flavors, until caramelized or lightly browned. Reserve 1/2 cup for the mashed potato.
Place the potatoes in the Express® Pressure Cooker over high heat and cover with water. Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out, lower the flame to medium and cook for 10 minutes.
Remove the Express® Pressure Cooker from the heat, let it cool, remove the pressure regulator, open the Express® Pressure Cooker and that's it!
The potatoes should feel soft when chopped with a fork. Drain and place the potatoes in a bowl. Press with a bean crusher until you get a rustic puree.
Add the cream and mix. Add the reserved caramelized cheese and onion.
