Shrimp Filled Potatoes

Potatoes are always the perfect accompaniment to your dishes, and these delicious potatoes will not be the exception with their creamy shrimp and cream cheese filling and a spicy chipotle flavor, gratinated with manchego cheese. They are irresistible!

Ingredients

6 servings
  • 6 pieces of potato
  • 1 tablespoon of Butter
  • 3 spoonfuls of red onion
  • 1 tablespoon of garlic finely chopped
  • 2 cups of shrimp clean and without peel
  • 1/2 Cup of sour cream
  • 190 grams of cream cheese
  • 2 spoonfuls of chipotle chile pepper ground
  • to taste of salt and pepper
  • 1 tablespoon of parsley finely chopped
  • 1 Cup of Manchego cheese to grill

    Preparation

    Preheat the oven to 180 ° C.
    Wrap the potatoes in aluminum foil and bake for 40 min.
    With a spoon spoon the potatoes and reserve.
    For the filling heat the butter in a pan over low heat and sauté the onion, add the garlic, the shrimp cook for 2 min, add the sour cream, the cream cheese, the chipotle pepper, season with salt and pepper add the parsley and remove from fire.
    Fill the potatoes with shrimp, add manchego cheese and gratin for 10 minutes in the oven.
    Enjoy warm.

    TIPS

    If you do not have an oven, you can boil the potatoes and to grill them you can wrap them in aluminum foil and cook in a bain-marie.
