Cut some boxes of aluminum paper Store it® into squares of 15 x 15 cm (about 6 inches), place the potato in the center and add a little olive oil, pepper, sea salt and thyme. Wrap and bake for 45 minutes at 200 ° C (396F).
Check the cooking, penetrate the potato with a knife, if it enters easily means that the potato is cooked, remove it and set aside.
For the filling: brown the bacon in the oven and chop finely. Finely chop the chives and integrate with the sour cream along with the bacon. Set aside some chives to decorate. Finally, add the blue cheese, salt and pepper.
Open the potato by making a cross cut, place the filling you prepared and decorate with chopped bacon and chives. Do not remove it from the Storeit® foil as this serves as a plate and keeps the potato warm.
