Rajas con crema is the classic accompaniment of the traditional taquizas, where Mexican recipes are cooked that can be eaten in tacos. Perfect to accompany meat or fish.

Ingredients

4 portions
  • 1 kilo poblano pepper
  • 1 onion, white
  • 2 cups whole milk cream
  • 1 tablespoon chicken soup
  • ears salt, to taste
  • white vinegar

Preparation

Place poblano peppers over the fire until all the skin is burned. Once they are black, put inside a bag, close the bag and let them sweat for 10 minutes. Remove the chiles from the bag and peel them.
Open the chiles and remove all the seeds and veins.
Place the chiles in white vinegar for 30 minutes to make them bite less.
Place 2 tablespoons of oil in a pan and cook the onion previously cut in julienne until golden brown. Add the chicken stock and continue cooking.
Cut the chili into slices and add to the onion. Cook for 5 minutes and add the cream. Cook for 10 more minutes.

PRESENTATION

Serve in a casserole accompanied by handmade corn tortillas.
