Rice for sushi is a short grain rice that is seasoned with rice vinegar. This rice is ideal for making sushi due to its consistency and flavor.

Ingredients

4 portions
  • 2 cups sushi rice
  • 3 tablespoons rice vinegar
  • 4 tablespoons sugar
  • 1 tablespoon salt

Preparation

Put the rice in a deep bowl with cold water and see how the water takes a light white color. Strain the rice and repeat until the water remains clear.
In a saucepan over medium heat combine the rice with 2 cups of water. Cover and let the water boil, lower to a low heat and cook for 20 minutes or until all the water has been absorbed.
Remove the lid and leave the rice at room temperature for 10 minutes.
Pour the rice in a deep bowl. In another bowl mix the vinegar with the sugar and salt and add to the rice. Mix with a fork without crushing the rice.
Allow the rice to cool before using for sushi or serve well in a deep dish accompanied by soy and fish sashimi.

TIPS

You can cover the rice with aluminum foil and use it up to 6 hours after doing it. If you make the rice in a rice cooking machine, add the 2 cups of rice and 2 cups of water and once you are ready, continue with step 4.
