Ingredients

12 portions
  • 2 1/2 cups rice, pre-cooked
  • 6 cloves garlic
  • 1 onion, halved
  • 1 onion, finely chopped
  • 4 poblano peppers, roasted, peeled and seeded. Chopped
  • 3 poblano peppers, roasted, peeled and sliced
  • 3 red snapper fillets, in squares
  • 1/4 kilos shrimp, peeled and deveined
  • 1 kilo white clam, soaked in cold water, changing it several times
  • 12 shrimps, with head, or prawns
  • 1 cup pea
  • 1 cup green bean
  • 2 bell peppers, roasted, peeled and sliced
  • 6 cups chicken soup, or seafood broth

Preparation

Put the olive oil in a paella pan and fry the garlic and onion until golden brown. Remove the garlic and onion. Fry the shrimp and remove them. Fry the prawns and remove them.
Grind 1 clove of garlic, the chopped onion, the 4 poblano peppers, 1 green pepper with 1 cup of chicken broth in the blender.
Fry the puree in the oil. Add the rice, the poblano pepper slices and the vegetables. Add 5 cups of chicken broth and cover. Leave 15 minutes in a soft fire.
Uncover the paella pan and arrange the clams, shrimp, fish, pepper slices and prawns.
Cover the pan with aluminum foil and leave on a low heat. Add more broth as needed.
Remove and let stand 10 minutes before serving.
