A variation on traditional paella, prepared with poblano chiles, vegetables, shrimp, fish, clams and prawns.

Ingredients

12 portions
  • 2 1/2 cups rice, pre cooked
  • 6 cloves garlic
  • 1 onion, split in half
  • 1 onion, finely chopped
  • 4 poblano peppers, Roasted, peeled and without seeds. Chopped
  • 3 poblano peppers, Roasted, peeled and sliced
  • 3 red snapper fillets, in pictures
  • 1/4 kilos shrimp, peeled and deveined
  • 1 kilo white clam, soaked in cold water, changing it several times
  • 12 shrimps, with head, or prawns
  • 1 cup pea
  • 1 cup green bean
  • 2 bell peppers, Roasted, peeled and sliced
  • 6 cups chicken soup, or seafood broth
  • 1 paella

Preparation

In a paella pan, put the olive oil and fry the garlic and onion until golden brown. Remove garlic and onion. Fry the shrimp and remove them. Fry the prawns and remove them.
To grind in the blender 1 clove of garlic, the chopped onion, the 4 poblano peppers, 1 green pepper with 1 cup of chicken broth.
Fry the puree in the oil. Add the rice, poblano chile slices and vegetables. Add 5 cups of chicken broth and cover. Leave 15 minutes in soft heat.
Uncover the paella pan and arrange the clams, shrimp, fish, pepper slices and prawns.
Cover the pan with aluminum foil and leave in soft heat. Put more broth as needed.
Remove and let stand 10 minutes before serving.
