Coconut rice is a very aromatic rice that perfectly accompanies seafood or chickens. This recipe is very rich and very easy.

Ingredients

4 servings
  • 1 Cup of chicken soup
  • 3/4 of Cup of Water
  • 1 Cup of long grain rice
  • 1 pinch of Salt
  • 1/2 Cup of coconut milk (natural without sugar)
  • 1/2 tablespoon of lemon zest
  • 1 pinch of ground pepper

    Preparation

    In a large pot heat the chicken broth and water until it starts to boil.
    Add the rice and salt and cook until it boils.
    Cover the pot, lower the heat and cook until the rice is cooked and has absorbed all the liquid.
    With a fork remove the rice a little and add the coconut milk, lemon and pepper. Mix well.

    PRESENTATION

    Serve the rice in a platter or as a thread and decorate with coconut grated.
