Try this delicious Mexican rice with carrots, it is very easy and simple to make, the chile de árbol will give you a spicy touch that your family will love.

Ingredients

4 portions
  • 3 tablespoons oil
  • 1 cup rice
  • 1/4 onions
  • 1 clove garlic
  • 1/2 cups mashed tomatoes
  • salt, to taste
  • 3 black pepper
  • Ground cumin, to taste
  • 2 cups Water
  • 2 carrots, diced
  • 2 chile de árbol peppers

Preparation

Wash the rice and let it drain for 2 minutes.
In a saucepan heat the oil and fry the rice while stirring until it is lightly browned.
Blend the onion with the garlic, tomato puree, salt, pepper, cumin and water.
Since the rice is brown, add the previous mixture with the carrot and the tree chili, mix until it boils and heat over low heat with a lid for 15 to 20 minutes or until the water evaporates.

TIPS

The more golden your rice is, the harder it is to stick and just when the water evaporates turn off the fire so it does not burn.
