Ingredients

6 portions
  • 3 cups Water
  • 2 cloves garlic
  • 1/4 onions
  • enough oil
  • 1 1/2 cups rice, soaked in hot water
  • 1/2 cups corn kernels
  • 1/2 cups Poblano pepper Strips (Rajas)
  • to taste salt
  • enough fresh coriander
  • 2 tablespoons lemon juice

Preparation

Blend the water with the garlic and onion. Reservation.
Heat the oil over medium heat, add the rice and fry for 5 minutes, or until lightly browned.
Add the corn kernels, the poblano pepper rajas, the water, the coriander and season with salt; Cover and cook for 10 minutes, then add the lemon juice and cook for 10 more minutes.
Let stand 5 to 10 minutes to finish cooking with the same heat. Serve and decorate with cilantro.

TIPS
