Avocado Sushi

Avocado sushi is ideal for vegetarians. I put chives also for a richer flavor.

Ingredients

32 servings
  • 300 grams of rice for sushi
  • 2 spoonfuls of rice vinegar or white wine
  • 1 teaspoonful of powder sugar
  • 1 avocado big
  • 1/2 lemon juice
  • 4 leaves of nori seaweed
  • 1 bunch of scallion
  • soy sauces sweet, to serve

Preparation

Put the rice in a small pan with 600ml of water. Bring to a boil and cook for 10 minutes or until the water is absorbed and the rice is tender. Stir with the vinegar and sugar, cover and let cool.
Peel and cut the avocado into slices, put it in a container and squeeze the lemon on top, be sure to turn the avocado so that it is well covered with juice on both sides.
Divide the rice between the nori leaves and spread evenly, leaving an edge of 1 cm at the top and bottom. Place the chives and the avocado in the center.
Fold the bottom edge of the nori seaweed sheets over the stuffing and roll tightly.
Moisten the top edge with a little water to help seal the roll. Repeat the procedure to make 4 rolls. At this stage, the rolls can be wrapped individually in adherent plastic film and left to cool until they are ready to serve.
With a serrated knife, cut each roll into 8 slices.

TIPS

Serve with sweet soy sauce.
