Black Rice with Squid

Black rice is a typical Spanish dish. It is painted with squid ink which gives it a delicious seafood flavor.

Ingredients

6 portions
  • 400 grams rice
  • 6 tablespoons olive oil
  • 1 onion, chopped
  • cloves garlic, big pounded
  • 400 grams squid, clean cut into rings and tentacles into chunks (if large)
  • 1 liter fish soup
  • 4 envelopes squid ink
  • salt, to taste

Preparation

Put the fish stock and squid ink in a pot. Boil and reserve.
In a paella pan and if you don't have it in a large frying pan, add oil, garlic, and squid.
Add the rice, fry it until it sings and add the fish stock (800ml). Add salt.
Cook over low heat for 15 min or until the water has evaporated.
