Black rice with squid

Black rice is a typical Spanish dish. It is painted with squid ink that gives a delicious seafood flavor.

Ingredients

6 portions
  • 400 grams rice
  • 6 tablespoons olive oil
  • 1 onion, chopped
  • cloves garlic, big crushed
  • 400 grams squid, clean cut into rings and the tentacles into pieces (if they are large)
  • 1 liter fish soup
  • 4 envelopes squid ink
  • salt, to taste

Preparation

Put the fish broth and the squid ink in a pot. Boil and reserve.
In a paella pan and if you do not have in a large pan put oil, garlic, squid.
Add the rice, sauté it to taste and add the fish broth (800ml). Add salt.
Cook over low heat for 15 min or until the water has evaporated.
