Preparation
Put the cup of rice to cook with the three cups of water. While the rice is cooking on a low heat, chop the pumpkin, onion, eggplant and tomato in squares.
In a different pan, place enough coconut oil to then place a bed of green cabbage and add the juice of two lemons.
Add the chopped ingredients to the rice by adding a pinch of sea salt, curry powder and mix.
On the bed of green cabbage add the rice.
