Mexican Rice with a Mediterranean Touch

A dish to accompany or enjoy by fusing the flavors of Mexican and Mediterranean rice. It is easy to prepare and can be used for lunch or dinner.

Ingredients

  • 1 Cup of rice
  • 3 cups of Water
  • 1 pumpkin
  • 1 onion
  • 1 piece of eggplant
  • 1 tomato
  • 1 carrot
  • 1 cabbage green
  • 2 spoonfuls of coconut oil
  • 1 tablespoon of olive oil
  • 1 avocado
  • 2 lemons
  • 1 radish
  • 1/2 Cup of pumpkin seed
  • to taste of sea ​​salt
  • 1 teaspoonful of curry
  • 1 teaspoonful of Cayenne pepper

    Preparation

    Put the cup of rice to cook with the three cups of water. While the rice is cooking on a low heat, chop the pumpkin, onion, eggplant and tomato in squares.
    In a different pan, place enough coconut oil to then place a bed of green cabbage and add the juice of two lemons.
    Add the chopped ingredients to the rice by adding a pinch of sea salt, curry powder and mix.
    On the bed of green cabbage add the rice.

    PRESENTATION

    Decorate with slices of avocado, add the carrot, preferably striped like radish, add a little cayenne pepper, pumpkin seeds and top with olive oil. Serve and enjoy.

    TIPS

    It can be accompanied with chicken or other meats.
