Preparation
The rice is washed a minimum of three times in abundant water until it comes out completely clean.
It is boiled for about eighteen minutes, drained and allowed to cool.
It is then passed through the wok with a little beaten egg and left to rest for a minimum of ten minutes. Then sauté again with a little egg and vegetable oil and add the prawns and the chopped pineapple.
It is fired over a high heat for five minutes agitating it vigorously and, while it is sautéing, the necessary base broth is added little by little so that it does not dry out.
