Preparation
Pre warm the oven to 220 degrees Celsius.
Cut the sweet potatoes into thick pieces like the ones in the photo.
In a large bowl, mix olive oil, orange juice, salt and pepper.
Add the sweet potatoes, and stir so everyone is covered in the vinaigrette.
Place on a baking sheet and bake for 45 minutes or until the sweet potatoes are soft and well done. Remove from the oven and serve.
