Preparation
Preheat the grill, or a grill pan over medium heat.
Cut the edges of the zucchini and brush the zucchini slices with olive oil. Sprinkle with salt and pepper.
Grill about 4 minutes per side until smooth.
In a bowl put the goat cheese, parsley, lemon and mix with a fork.
Put 1/2 teaspoon of the cheese mixture about 2 cm from the edge of the zucchini slice. Top with spinach leaves and a small basil leaf.
Roll up and put the edge down on the plates.
Repeat the same step with the other slices of zucchini.
