Ingredients

4 servings
  • 1 piece of eggplant
  • 1/2 tablespoon of cumin powder
  • 1/2 tablespoon of curry powder
  • 1 pinch of nutmeg powder
  • 1 pinch of ground clove
  • 1/2 piece of yellow onion finely chopped
  • 1 clove of garlic finely chopped
  • cooking vegetable spray
  • 1 olive oil

    Preparation

    Preheats the grill. Grease the grill or pan with vegetable spray.
    Cut the eggplant into slices and place them in the frying pan or grill. Turn the aubergine once and let it cook until tender and golden brown. Approximately 5 minutes on each side. Remove from the grill and place on a plate.
    In a deep bowl mix the spices. Heat the olive oil in a pan, add the spices and cook for 30 seconds. Add the onions and cook until translucent. Add the garlic and season with salt and pepper. Cook for 4 more minutes.

    PRESENTATION

    Place the aubergines in individual dishes and serve on them the sauce of spices. Garnish with chopped cilantro.
