Preparation
Preheat the oven to 320 F and put a baking sheet in the upper area of the oven. Grease a mold 30 centimeters in diameter with olive oil.
Put the gouda cheese in the food processor and finely chop it. Add spinach, whole eggs, egg whites, ricotta cheese, flour and nutmeg and process until well blended (about 30 seconds). Add the scallion and stir.
Put the mixture in the greased mold and sprinkle with Parmesan cheese and paprika. Put the quiche on the preheated tray and cook until the center is cooked, about 25-30 minutes.
