Ingredients

4 portions
  • 4 poblano peppers, roasted, peeled and seeded
  • 100 grams refried beans
  • 100 grams Ranchero cheese, or sliced ​​manchego cheese
  • 3 tomatoes, roasted and peeled
  • 1/4 white onions
  • 4 tablespoons cream
  • 1 clove garlic

Preparation

Preheat the oven to 180 °
Fill the chiles with the refried beans and a thick slice of cheese. Close them with wooden sticks.
Grease a mold and Bake the chiles for 15 min.
In a molcajete or food processor, grind the tomatoes, onion the garlic and season with salt and pepper. Fry the sauce for a few minutes.
Take the chilies out of the oven and serve them with the sauce and decorate with a spoonful of cream.

TIPS

If you want the chiles not to be so spicy, you can soak them 15 minutes in water before filling them. You can use frozen chiles.
