Ingredients

8 portions
  • 1 Paté Brisée pastry dough
  • 2 tablespoons Dijon mustard
  • 60 grams Gruyere cheese, grated
  • 6 tomatoes, medium
  • 250 grams mozzarella cheese
  • 1 teaspoon fresh thyme
  • 2 tablespoons olive oil

Preparation

Heat the oven to 375ºF. Flatten the Brisée pasta with the rolling pin and put it on a greased and floured cake mold. Cut into thin slices the tomato and also do it with Mozzarella cheese.
Spread the bottom of the pasta with Dijon mustard. Sprinkle the grated cheese on top of the mustard. On this go putting a tomato, a slice of Mozzarella, a tomato, Mozzarella, etc. Accommodating around the mold and ending in the center and continuing around until you finish with everything. Sprinkle chopped thyme, salt and pepper.
Put at the end the olive oil well distributed over the whole cake. Bake in the center of the oven for 35 or 40 minutes, or until it is beginning to brown. Remove from the oven, add other drops of olive oil and serve immediately.

PRESENTATION
