Ingredients

2 portions
  • 2 carrots, peeled and grated
  • 1 beets, peeled and grated
  • 1 cup jicama, grated
  • 1 pumpkin, grated
  • 1 cup cream
  • 7 tablespoons mayonnaise
  • 1 lemon, just the juice
  • 3 tablespoons olive oil
  • to taste salt and pepper
  • 4 avocados, split in half and boneless

Preparation

Mix the carrot, beet, jicama, pumpkin, cream, mayonnaise, lemon juice and olive oil. Season to taste.
Fill the avocados with the previous mixture and serve.
