Cauliflower Tacos "al Pastor style"

If you are keeping an eye on your weight these cauliflower tacos al pastor style are for you. Ideal for a Monday without meat, since in addition to not having an animal product, you will have a rich and nutritious dish in just 3 steps. Accompany your tacos with lime, salsa, cilantro and pineapple.

Ingredients

4 servings
  • to taste of oil
  • 1/4 of piece of onion in fourths
  • 4 pieces of guajillo chili pepper deveined
  • 2 pieces of pasilla chili pepper deveined
  • 4 pieces of tomato in halves
  • 1 clove of garlic
  • 1 Cup of Vegetables soup
  • 2 spoonfuls of achiote (10 g)
  • 4 cups of cauliflower cooked and in bite sized florets
  • to taste of salt and pepper
  • 12 pieces of Corn tortillas
  • 1/4 of Cup of onion finely chopped
  • 1/4 of Cup of coriander finely chopped
  • 1/4 of Cup of pineapple grilled, finely chopped
  • to taste of green sauce or red
  • 2 pieces of green lemon in halves

    Preparation

    For the sauce, in a saucepan over medium heat, fry the onion, chiles, tomato and garlic with oil until the tomatoes begin to crumble. Add the vegetable broth and reduce. Blend with achiote until you get a sauce.
    In a deep skillet, sauté the cauliflower with a little oil until browned. Add the sauce for a few minutes and season with salt and pepper.
    Serve cauliflower over hot tortillas and garnish with onion, cilantro, pineapple, salsa and limes, enjoy.

    PRESENTATION

    Garnish with cilantro, onion, pineapple and salsa. Serve them with a delicious fresh fruit water.

    TIPS

    If you want to make your recipe even more healthy you can serve your tacos in lettuce leaves, in the same way they will taste delicious.
