For the sauce, in a saucepan over medium heat, fry the onion, chiles, tomato and garlic with oil until the tomatoes begin to crumble. Add the vegetable broth and reduce. Blend with achiote until you get a sauce.
In a deep skillet, sauté the cauliflower with a little oil until browned. Add the sauce for a few minutes and season with salt and pepper.
Serve cauliflower over hot tortillas and garnish with onion, cilantro, pineapple, salsa and limes, enjoy.
