Preparation
Put the cauliflower to cook in a liter of salted water and a cube of chicken broth. Leave it on medium heat for 10 min. or until the cauliflower is tender.
In a deep dish add the mayonnaise cup, the juice of the lemons and the eggs.
When the cauliflower finishes cooking, throw all the water and place the dried cauliflower in a rectangular refractory.
Place the mixture on top and sprinkle with grated Manchego cheese.
Put the refractory in the microwave oven for 10 minutes or until the cheese is grated and the mixture looks thick.
